Misal Pav ( Mumbai Roadside Recipes )

Misal means “mixture” in marathi and if you are in bombay, you should definitely not miss this treat! technically, a usal topped with farsan, chopped onions, tomatoes and lemon, it is best served with pav. Puneri misal and kolhapuri misal are the granddads of the missal clan!

Ingredients

For The Misal
1 1/2 tbsp oil
1/2 tsp cumin seeds (jeera)
1/4 cup chopped onions
1 tsp ginger-garlic (adrak-lehsun) paste
1/2 cup tomato puree
1/4 tsp clove powder
1/4 tsp cinnamon (dalchini) powder
1/4 tsp turmeric powder (haldi)
1 tbsp coriander-cumin seeds (dhania-jeera) powder
1 1/2 tsp chilli powder
1 tbsp misal masala (readily available in the market)
a pinch of sugar (optional)
salt to taste
1 cup boiled mixed sprouts
2 tbsp chopped coriander (dhania)

For Serving
1 cup mixed farsan
8 tbsp finely chopped onions
4 lemon wedges
8 laadi pavs
Method
For the misal

1.            Heat the oil in a kadhai and add the cumin seeds.
2.            When the seeds crackle, add the onions and ginger-garlic paste and sautĂ© on a medium flame for 4 to 5 minutes.
3.            Add the tomato purĂ©e, clove powder, cinnamon powder, turmeric powder, coriander-cumin seeds powder, chilli powder, misal masala, sugar, salt and ¼ cup of water, mix well and simmer for 5 to 7 minutes or till the oil separates, while stirring continuously.
4.            Add the mixed sprouts, ¾ cup of water and coriander, mix well and simmer for another 2 minutes, while stirring continuously.

How to serve

1.            Place ¼th of the masala on a small plate, top with ¼th of the missal, ¼ cup of farsan and ¼ cup of onions evenly over it.
2.            Serve immediately with 2 pavs and a lemon wedge.
3.            Repeat with the remaining ingredients to make 3 more plates.

1.       Potatoes boiled and peeled
2.       6 large
3.       Oil
4.       1 tablespoon + to deep fry
5.       Asafoetida
6.       a pinch
7.       Turmeric powder
8.       1/4 teaspoon
9.       Green chilli-garlic paste
10.   1 tablespoon
11.   Salt
12.   to taste
13.   Fresh coriander leaves chopped
14.   1/4 cup
15.   Lemon juice
16.   1 tablespoon
17.   Loaves of bread (pav)
18.   8 small
19.   FOR BATTER
20.   Coarse gram flour (besan)
21.   1 1/4 cups
22.   Salt
23.   to taste
24.   Red chilli powder
25.   1/2 teaspoon
26.   Turmeric powder
27.   1/4 teaspoon
28.   Soda bicarbonate
29.   a small pinch

Method

·         Step 1 To make the batter place the gram flour in a bowl. Add salt, red chilli powder, turmeric powder, soda bicarbonate and mix. Add sufficient water and whip to a smooth and thick batter. Set aside for at least fifteen minutes. Place the boiled potatoes in a b
·         Step 2 Heat one tablespoon oil in a pan. Add asafoetida, turmeric powder, green chilli-garlic paste and mix. Add potatoes and salt and mix. Set aside to cool. Add coriander leaves, lemon juice and mix mashing the potatoes some more.
·         Step 3 Divide the mixture into eight equal portions and shape them into balls.
·         Step 4 Heat sufficient oil in a kadai. Dip the potato balls in the gram flour batter and deep fry till golden and crisp on the outside. Drain on absorbent paper. Slit each pav, spread some dry garlic chutney, place a vada and press lightly.

Rasgulla Recipe



Here it Kolkata’s all time famous recipe Rasgulla for you..

Prep Time: 30 mins    |  Cook time: 30 mins    |  Makes: 12 - 14 rasgullas  


Ingredients:

Milk: 2 cups
Water: 1 and 3/4 cup
Sugar : 1 cup
Lemon Juice: 1 and half tbsp
A pinch of cardamom powder or A few drops of rose essence 

 
Method:

1. In a vessel, bring the milk to a boil. Add a tablespoon of lemon juice to it and mix until the milk curdles. 

2. Keep stirring and then add the remaining lemon juice. Keep stirring until the whey completely separates.

3. Switch off the heat and strain the paneer in a cheese cloth. 
4. Wash the paneer with fresh water to wash away the sourness of the lemon.

5. Bring the edges of the cloth up and tie it together. Squeeze the excess water and hang the cloth above the sink for 30 minutes. 
6. Knead the paneer to make a smooth pliable. Kneading the paneer is very important. Knead it for 10 minutes.
 
7. Divide the paneer dough into equal size small portions and shape each portion into a smooth round ball.
8. In a wide vessel, add the sugar and water and allow the sugar to melt.

9. Now reduce the heat to medium flame and add the rasgullas carefully.

10. Cover with a lid and cook for 10 -15 minutes. Open the lid occasionally.

11. Then switch off the flame and let them cool completely. 


12. Refrigerate it and serve chilled.
